New to Filet Crochet

I am new to filet crochet and just bought 6 patterns from your website. I have been crocheting for many years.

I would like to know how to extend the rows. For instance on your Queen of Hearts Doily you start with a chain of 124, but then in row 2 you have 3 extra stitches. I also do not know what the wave stitches are. it looks like a Y in the pattern. And looks to take up two stitches.

Please help! Thank you in advance.
